The Sonntaler has a rather unique profile. There's fruit (evokes pomegranate to me) and enough freshness but with an earthy smokyness.

Anything you would sprinkle a bit of pomegranate seeds and herbs as a finishing touch is a good choice so I'd lean towards persian, syrian, moroccan or fusion flavours. The kind of recipes you'd get from the like Sabrina Ghayour, Diana Henry, Ottolenghi etc.

It can handle fish, especially if it is flavoured with herbs/fruity flavours. Made into started that could be grilled marinated sardines, fishcakes or crabcakes (but with a south american or middle east twist), fish tacos or ceviche

The smokey side goes well with roasted lamb. The last time we had it we made a butterflied leg of lamb from a Sabrina Ghayour recipe (marinated with yogurt and spices then served with a pomegranate salse) no reason you can't make a lamb chop as a starter in that style. Or chicken wings with Dukkah. 

And if you wanted to go vegetarian then those salads of grilled aubergines, stuffed aubergines etc. 

Or to stay close to its Italian origin, a couple raviolis in sage butter with a touch of fruit/nuts in the filling (or on the drizzle - hazelnut raisins sage and parmesan on pumpkin ravioli, for example)
